Just another morning...
To be completely honest I'm trying to think of a name for this amazingly scrumptious breakfast the my boy and i always make. I thought of SPPE (sweet potatoes, potatoes, and eggs) since abbreviations seem to be taking over my life, but that just sounds ridiculous. So I'm hoping you guys can up with something better.
Here is what you will Need
1 - medium Sweet Potato
1 - medium regular Potato
1 - Avocado
Eggs - your choice of how many Eggs
4 leaves - Fresh Basil
1tsp - Minced Garlic
California Chili Peper
Sea Salt & Pepper (light on both, cause you will add it to everything)
Olive Oil + Canola Oil
Step 1 - Pour equal parts of olive oil and canola oil into pan ( 1 Tbsp each at least, you basically want the bottom of the pan to be generously coated). Turn oven on med-low while you chop the potatoes into bite size (small) cubes
Step 2 - Put the cubed potatoes in hot oiled frying pan, stir (or fling them you pros out there), then add some the spices - chili pepper, salt and pepper stir/fling again. Place lid on and let cook until potatoes done (15-20min on medium flame) Note: I add a little bit of spices in the beginning and then 1 or 2 times more as they cook
Step 3 - Throw in about a teaspoon of minced garlic last 2 minutes - this way the garlic wont burn and it will give you a stronger flavor (garlic can be optional of course)
Step 4 - The potatoes should be done so you can put them aside (or in the toaster oven or some place to keep them warm) while you make the eggs. Eggs are super fast - We like them over easy, or with the yolk still runny (but you of course can cook your eggs to your liking). These are "super eggs" were kinda health freaks so to cut back on yolks we do one egg and then add just egg whites. lightly salt and pepper.
Step 5 - While eggs cook on low. Finely chop the fresh basil and slice the avocado.
Serve - Layer, potatoes first, eggs second, avocado on top, then sprinkle the frech chopped basil, salt and pepper and enjoy. Light Ketchup if you must.
I highly recommend eating this outside in the cali sunshine - It just makes it that much better.
I would love to take credit for this tasty creation however i have to give props to my boy, Yes he is also a chef (i know how to pick em;). I just recreated it with a feminine flare :)
